Roasting Notes

Tanzania Ngila Estate Kent AB

Book warm up:
- Bring the BT up to charge temp + 20 degrees C using medium high gas
- Idle at this temp for 25-30 minutes
- Lower gas so the BT drops to charge + 5 degrees Charge
- Perform BBP
- Charge

FB Group warm up:
- Idle at 15-20 degrees C above average ending BT for 20 minutes
- Bring temp down to 5 degrees above average ending temp
- BBP

Book BBP 1:
- Set gas to zero, drop batch, close door
- Drift down with zero or low gas until BT reaches bottom temp (charge -20 degrees C), reached within 2:30 to 4 minutes
- At bottoming temp, use low-medium gas to rise to the charge temp in 1:30
- Charge at planned charge temp

Book BBP 2:
- Set gas to zero, drop batch, close door
- Use low to medium gas until the BT reaches charge +10 degrees
- Set gas off or to a very low setting such that the BT reading drifts down to the charge temp in 1:30 - 2:30 min.
- Charge at planned charge temp

moisture : 11.2%
AW: 0.517
21.5 C, 54.7% RH

The plan:

Warm-up:
Drum 100%, Airflow 50%
Gas 70% (medium-high heat) Get to 205 degrees C; idle there for 20 minutes (I changed the gas to 40 and it still managed to idle at 205)
After 20 minutes, gas 20%; bring temp down to 195 (2 minutes)
BBP:
Gas off until BT reaches 161 (4:30 minutes in)
Charging:
Gas 20%, air 20% until BT reaches 158 within 60s, then charge

In batch:
Charge 158 C, gas 50%, airflow 20%
Gas 40%@145 C, airflow same
Gas 30%@155 C, airflow same
Gas same%@165 C, airflow 50%
Mark FC @185
Gas 20%@12% DTR, airflow same
Drop at 1:40 dev time

Bottoming temp calculations:
156 gets to by 2:30 minutes after drop (50% air no gas)
139 gets to by 4 minutes (50% air no gas)
Gets to 141 within a minute at 30% burner; 20% burner does nothing - temp drops

I think BBP 2 might be better. This means as warm up for next time:
- Gas 60%, Fan 50% until 205-210 C
- Gas 40%, Fan 50% Idle at 205-210 C for 20 minutes
- Gas 30%, fan 50% until 195 C
- Gas 20%, fan 50% until 140 C (or whatever temp you get to in 2:30 minutes)
- Charge
- Gas 50%, fan 20%
- BBP
