Royal Crown Jewel 38505-1 : Colombia Washed Chiroso Evelio Lasso.

First roast of my 22lb box from Royal, not quite a match Doris Garrido did on the Dietrich IR5. She had a slightly longer development post 1C and lower finish temperature. It’s only one day rest, however I would say this Chiroso for me is a classic Colombian. This particular roast came out Light/Medium on my color meter; next will try to get a solid medium roast trying for a 1:30 post development.

Out of the Crown Jewel offerings at the time; the cultivar, processing, altitude, and (price) led me to this selection. I noticed an underripe while grinding this morning, will do a 100g green analysis later on. Otherwise the sorting looks nice, and beans are uniform.

For the home roasters out there, I can recommend the Chiroso 38505-1 for a couple of reasons: one it’s a single unique cultivar from a small farm, high grown altitude, and careful washed processing. With all the wild and crazy offerings, this one’s a safe bet.
