Roasting Notes
Process Detail: Cherries are floated before depulping. Wet parchment is fermented in tanks for 24–36 hours, then moved to raised beds for drying (approx. 14 days). The coffee is homogenized in plastic bags for a few weeks in a local warehouse before final dry-milling in Addis Ababa.
Growing Info: Grown 100% organically (uncertified due to micro-scale operations and high bureaucratic costs).
Density & Heat Application: With a water activity of 0.56 and a classic 11.4% humidity, this green coffee sits right in the ideal preservation pocket. However, the Kurume variety produces particularly small and highly dense (hard) seeds. Due to this density and the very high altitude (up to 2200m), you need a strong, stable energy input during the Charge and Drying phases to penetrate the core of the seed effectively.
First Crack (1C) Stability: Import logs note that this lot is highly "user-friendly," stable, and reactive. It shows excellent linearity, meaning it has a minimal tendency to skyrocket or plummet (crash) in RoR directly following the onset of First Crack.
The Agtron Trap (Drop Warning): This coffee is highly sensitive to extended development. The importer explicitly warns that a minor extension—even just 3 to 4 Agtron units darker (a matter of a few seconds in the drum)—can completely erase the fragile floral, lemon grass, and light grapefruit top-notes. Target a light, vibrant filter roast profile with a precise, shorter development time ratio (around 13–16%).
